Article: Easy Roasted Bone Marrow

Easy Roasted Bone Marrow
I always say, feed your skin what it's made of.
Right now everyone is chasing collagen. Powders, drinks, supplements, all the things. And listen, I'm not against them. But I think we forget the most obvious place to start: actual food.
Your skin is living tissue. Your body needs enough energy, protein, amino acids, fats, vitamins and minerals to build and maintain that tissue and support its own collagen production.
Which brings me to bone marrow.
Bone marrow isn't some magical anti-aging food. It is a rich, whole-food source of fat and energy that I love working into a well-fed, protein-rich diet. And honestly? It's freaking delicious.
If you're on the collagen and healthy-aging train, consider this your reminder to look at what's on your plate, too.
Where do you buy marrow bones?
Ask your butcher, your local rancher, or the meat counter at your co-op for split beef marrow bones, also called canoe cut. Go grass-fed if you can get it. They're usually cheap, and a lot of butchers keep them in the freezer even if they're not in the case.
Roasted bone marrow recipe
You'll need:
- 2–4 split (canoe cut) grass-fed beef marrow bones
- Kosher salt
- Fresh cracked black pepper
- 1 lemon
- Flaky sea salt
- Fresh dill or chives, optional
- Sourdough, steak or rice for serving
How to make it:
- Preheat your oven to 450°F.
- Place the marrow bones cut-side up on a lined baking sheet. Season generously with salt and a little black pepper.
- Roast for 15–20 minutes.
- Finish with lemon zest, a little squeeze of lemon and flaky sea salt.
How do you know when it's done?
The marrow should be soft, glossy and bubbling around the edges. You want it beautifully soft but not completely melted out of the bones. If it's turning to liquid in the pan, pull it.

How to eat it
Scoop it onto toasted sourdough, let it melt over a steak, or stir it into warm rice.
That's it. Fancy steakhouse food with basically zero effort.
And maybe my favorite reminder of all: supporting your skin doesn't only come in a bottle. Sometimes it comes on a plate. 🤍
